Yahni - Okra in Tomato Sauce |

Ingredients
- 1lb okra
- 1 large onion, chopped
- 2 cloves of garlic, thinly sliced
- tin of peeled tomatoes or 1lb fresh tomatoes, skinned and finely
chopped
- 1 table spoon tomato puree
- salt & pepper

How to make it
- Wash and remove the stalks. NB Do not cut the okra otherwise
the vegetable will melt during cooking.
- Sauté the onions and garlic.
- Add the okra and fry for a few minutes.
- Add the chopped peeled tomatoes, tomato puree and season.
- Add enough water to cover and bring to the boil.
- Lower the heat to minimum, cover and simmer for 45minutes or until
the liquid reduces to a thick sauce.
- Serve hot as a main dish or cold as a meze.
