Beef
with Onions

Ingredients
- 2lb cubed beef
- 1 ˝ lb small onions (shallots)
- 4 cloves of garlic, thinly sliced
- 2 bay leaves
- 1 cinnamon stick
- 1 tbsp black peppercorns
- ˝ cup vinegar
- salt
- oil

Method
- Fry the onions whole until golden brown then remove from heat.
- Sauté the garlic then add the meat. Fry until brown on all sides.
- Add the vinegar, bay leaves, cinnamon stick, peppercorns and salt.
Add enough water to cover and bring to the boil. Cover and put on
minimum heat.
- Simmer for 1 ˝ hours or until the liquid has thickened. Towards the
end, add the onions to absorb some of the flavours.
- Serve hot.
